Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site

Commercially processed refrigerated, ready to eat, time/temperature control for safety food, and held more than 24 hours, is not being marked with the date it was opened.

3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding
Deli meat and cheese was held at 46 °F, in the baines, rather than 41°F or below as required.

4 – 602.13 Nonfood-Contact Surfaces
Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.

Assorted items were held at 44-46°F, in the sandwich board in the kitchen, rather than 41°F or below as required.

Non-food contact surfaces such as shelves, not cleaned at a frequency to preclude accumulation of dirt and soil.

2 – 402.11 Effectiveness-Hair Restraints
Food employees observed in front area, not wearing proper hair restraints in a manner that completely controls all hair.

4 – 903.11 (A-B)(D) Equipment, Utensils and Linens, Storing
Observed clean food equipment and/or utensils in kitchen area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

Litter and debris on floor between and under equipment and shelving in various areas.

3 – 305.14 Food Preparation
Exposed food preparation observed in kitchen area under dirty ventilation ducts, and subject to potential contamination.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils
Food contact surfaces, such as containers and utensils in storage, ice chutes at soda station, and stored processing equipment, were not clean to sight and touch.

6 – 501.111 Controlling Pests
Food facility inspection indicates evidence of insect activity in bar area. Observed 25 roach like insects at pest control monitoring devices at various locations.

4 – 602.13 Nonfood-Contact Surfaces
Accumulations of grease and old food debris are present at hard to reach areas under cook line and flat top grille.

Found to be out of violation, November 8, 2018

2 – 101.11 Person in Charge, Assignment
The Food Facility Operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. The two employees present during the inspection told the inspectors that they were not in charge of the facility. The Food Facility operator was not present.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils
Food contact surfaces (cutting surfaces, cooking utensils) were observed to have food residue and was not clean to sight and touch.

4 – 602.13 Nonfood-Contact Surfaces
Non-food contact surfaces (kitchen floor/wall behind cooking equipment, areas under warewashing sinks & bar areas) are not cleaned at a frequency to preclude accumulation of cooking grease, food residue & dirt.

6 – 501.112 Removing Dead or Trapped Birds, Insects, Rodents and other Pests
Observed apparent cockroaches (more than 20) trapped in three pest control devices located in various locations at the bar area.
