A food employee was observed touching the roll for a sandwich – a ready-to-eat food – with bare hands.
3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding
Six containers of meat were held at 73°F, 75°F, 80°F in the prep area, rather than 41°F or below as required. These items should be kept cold in equipment such as a bain-marie or time in lieu of temperature should be used and records of the time and temperature must be maintained.

The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
3 – 305.11 Food Storage, Preventing Contamination from the Premises
Observed food stored directly on the floor in the basement area, rather than 6 inches off of the floor as required.
4 – 602.13 Nonfood-Contact Surfaces
Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil; specifically the outside of a powdered sugar container.
6 – 202.15 Outer Openings, Protected
Openings at the rafters in an outside storage shed are open, unscreened, and not protected against the entry of insects, rodents, and other animals.
6 – 501.11 Repairing-Premises, Structures, Attachments & Fixtures-Methods
Old unused equipment stored in the prep area should be removed from the food facility. The basement, which is used for storing food and food supplies, has old equipment and many items which fall under the definition of rubbish. All exterior property and premises, and the interior of every structure, shall be free from any accumulation of rubbish. The discharge line for the pressure relief valve on two hot water heaters is not compliant with Code. Open slots on a circuit panel box are not permitted by Code.
2 – 301.14 When to Wash
Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between; specifically, the employee was sweeping the floor two different times without washing hands prior to preparing food.
4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Food utensils in a food bowl, all food contact surfaces, were observed to have food residue and were not clean to sight and touch.
6 – 301.12 Hand Drying Provision
Paper towel dispenser empty at the handwash sink in the employee toilet area. PIC said that a new cloth towel supplied by a linen service is being used each time a person uses the toilet handwashing sink. The Food Code requires one of the following: individual, disposable towels, a continuous roll system that supplies the user with a clean towel, a heated-air hand drying device, or a hand drying device that employs an air-knife system that delivers a high velocity, pressurized air at ambient temperatures.
3 – 501.19 Time as a Public Health Control
Time in lieu of temperature being used in the food facility to control ready-to-eat potentially hazardous foods without written procedures or documentation to verify disposition of food.
