An employee’s Monster energy drink with no lid or straw was sitting on Bain Marie on the cook-line, second employee’s drink with no lid and straw was stored on shelf above prep table. Corrected.
3 – 501.15 Cooling Methods and Food Containers Used/Arranged
Observed cooked chicken wings being cooled in walk-in cooler in container with tight-fitting lid and more than four inches deep, which is not a proper cooling method. Discussed better method of cooling laying wings on sheet pan in single layer and placing on speed rack in walk-in cooler.
3 – 501.17 Ready-to-Eat, Time/Temperature Control for Safety Food, Date Marking
Refrigerated ready-to-eat, time/temperature control (French onion soup) safety food prepared in the food facility and held for more than 24 hours, located in the walk-in, is not being discarded within seven days from productions. Soup dated for 10/16/24 discard date should have been 10/22/24. Discarded.
4 – 501.114 Mechanical or Manual Warewashing Equipment, Chemical Sanitization
Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Facility will use three-compartment sink until repair is completed.
4 – 601.11(A) Equipment, Food Contact Surfaces, Non-food Contact Surfaces and Utensils
Multiple Lexan pans stored clean with old sticker residue on the exterior and stacked on top of other Lexan pans. Discussed the importance of the removal of all old stickers and sticker residue.

Top of dishwasher with the accumulation of dirt and soil and in need of cleaning.
4 – 903.11 (A-B)(D) Equipment, Utensils and Linens, Storing
Clean utensils stored in container that have excessive crumbs and are clean to sight and touch in the kitchen area.
6 – 501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods
Ceiling tiles missing in the dishwashing area, are missing and need to be replaced. Facility is awear, and they are on the list to be replaced.
