Two food items, shrimp and queso cheese, were both dated Nov. 8 on Dec. 5. The items were to be discarded.

The door between the two prep areas had paint that was in very poor condition; it had peeling paint, and it was not clean.

Temperature measuring device for ensuring the proper temperature of equipment was not available or readily accessible in the outside walk-in freezer equipment.

Food facility did not have available chlorine sanitizer test strips (for dishwasher). The QT test strips for the three-compartment sink were water-damaged.

Door gaskets of the catering kitchen two-door reach-in cooler were severely torn and need to be replaced.

Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low-temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Corrected.
The quaternary ammonia concentration in the sanitizing solution of the three-bay warewash sink was 0 ppm, rather than 200-400 ppm as stated on the manufacturer’s use directions. Corrected.

Fan guards in the walk-in catering cooler were observed with an accumulation of dust.

The interior lip of the ice machine deflector shield was observed with a white accumulation and needed to be cleaned. The interior bottom of fryers at the grill station was observed with an accumulation of grease and food debris. The ceilings in the grill station, pizza station, and ice cream station were dusty and needed to be cleaned. The flooring under fryers at the grill station, and in BOH (floor wall junction area and around mixer) was observed with accumulation of grease, food debris, dust, and dirt.
