Food and other supplies were stored in the basement of the facility. The area was very disorganized, and some items were stored on the floor. The owner and employee stated that they would correct the storage issues in the basement.

Raw chicken and raw pork were both in the sink together. Both types of meat were discarded.

The container for dredging raw chicken was not clean.

The fan covers on the evaporator in the dairy walk-in cooler, non-food contact surfaces, were not cleaned at a frequency to preclude the accumulation of dirt and soil.
5 – 202.11 Approved System and Cleanable Fixtures
The mop sink was deteriorated and could no longer be properly cleaned. The sink should be replaced. The facility should consider resurfacing the floor next to the mop sink, as the floor showed decay and was a potential source for microbiological contamination.
