Raw chicken was stored above other raw items in the walk-in cooler. Raw chicken was stored on numerous different shelves in the walk-in cooler rather than being consolidated to one area or one set of shelves.

There were a significant number of obsolete items. There was clutter and disorganization. For example, chemicals were stored in several different areas. Clutter and unnecessary items prevent proper cleaning of all areas.

Raw shell eggs were stored above ready-to-eat subs in the cold holding unit.

The walk-in cooler condenser was not in proper working order. No TCS items were being stored in the cooler at the time of this inspection.

3 – 501.18 Ready-to-Eat, Time/Temperature Control for Safety Food, Disposition
Commercially processed hot dogs, time/temperature control for safety food in the refrigerator, were date-marked by the facility, but were beyond the seven-day use or sell-by date and required discarding.

6 – 201.13 Floor and Wall Junctions, Coved, and Enclosed or Sealed
Observed coving was broken, lying on the floor, and the backside wall of the three-bay sink was not coved and closed to 1/32 inch.

4 – 602.13 Non-Food Contact Surfaces
The drainage area of the three-bay sink was observed with the accumulation of built-up black matter. Sticky syrup was observed on the floor near the soda BIB boxes in the backroom area.

6 – 501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods
Two ceiling tiles were missing in the back storage area and need to be replaced.
