“If I had a dollar for every time someone at Bon Appétit raved about a spatchcocked chicken, I’d be a wealthy woman.”
That’s how Bon Appétit begins its review of Bell & Evans new spatchcocked chicken, an all-out love fest for the product, launched in mid-2018. The self-proclaimed “leisurely Sunday night roast chicken enthusiast” says that the best parts of the spatchock are the time saved and crispier skins. Read the review here.
“Spatchcock” means the bird is split and the backbone is removed. Spatchocking can be done at home but the Bell & Evans product allows chefs to minimize their handling of the raw poultry. Giblets are not included. The product can be marinated or season using the tray pack packing.
The product is carried at Whole Foods Lancaster, where it sold out both days during the store’s opening weekend last year. It is available locally at the company’s Fredericksburg retail outlet, located at 154 W. Main Street and open Tuesday through Friday 10am – 6pm and Saturdays 9am – 2pm. (Hours corrected 2/28.)
