Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

Food employees observed in prep area, not wearing proper hair restraints, such as nets or hats.

A food employee was observed touching sandwich – a ready to eat food – with bare hands.

Food contact surface of plastic containers and lids are cracked, split, and not easily cleanable.

Observed cooking equipment, in prep area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces.

Observed clean food equipment and/or utensils in dish washing area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

Food containers on drying shelf were observed to have food residue and were not clean to sight and touch. Ice machine not cleaned at a frequency to prevent the presence of mold.

Non-food contact, such as shelves, door handles, pulls, and interiors of refrigerators, are not cleaned at a frequency to preclude accumulation of dirt and soil.

3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding
Food in the baine marie was held at 43-53°F, in the prep area, rather than 41°F or below as required. Cheese that was sliced, wrapped, and stored in an upright refrigerator was found to be 46-48°F in a refrigerator that was at 41°F, indicating temperature abuse during processing.

Thermometer for measuring the temperature of the refrigerator is not accurate. Food items in the refrigerator are 41°F, but the thermometer in the unit was measuring 20 – 30 °F.

Observed jars of jam stored directly on the floor in storage area, rather than 6 inches off of the floor as required.

Hot pockets were held at 109 – 115°F, in the hot-holding area, rather than 135°F or above as required. Employee to reheat the food to the required temperature.

Commercially processed ready to eat food, located in the refrigerator, and held more than 48 hours, is not being marked with the date it was opened.

Observed towel being used for drying utensils and food equipment after cleaning.

3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding
Food was held at 47 – 48°F, in the under counter reach-in refrigerator area, rather than 41°F or below as required. There were two thermometers in the unit; one was accurate, but the other was not accurate.

4 – 501.114 Mechanical or Manual Warewashing Equipment, Chemical Sanitization
The employee stated the incorrect order for washing, rinsing and sanitizing equipment. The 3-compartment sink should be labeled and employees should know the correct process.

A few items in the deli were incorrectly dated by one day. Corrected.

The fan covers and frame of the evaporator in the walk-in cooler, non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.

  1. Thank you for letting the public know how safe or unsafe it is to eat or shop in our local establishments . Safety today is a big issue in food. I was at a Grocery store 2 weeks in a row to shop and they had dead flies in the deli dept. on the shelves where the sandwiches were and the next week there was a live fly in with roasted packaged chicken in the same dept. I wish I would have had a number to call ; where do you call if you see this? I did tell the Manager but there wasn’t much response !
