Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

3 – 302.11 Packaged and Unpackaged Food-Separation, Packaging & Segregation
Raw eggs are stored over produce in the walk-in cooler.

4 – 302.14 Sanitizing Solutions, Testing Devices
Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Chlorine strips are needed.

6 – 202.15 Outer Openings, Protected
Basement door has a large gap at the bottom and is not tight fitting.

4 – 602.11 Equipment Food Contact Surfaces and Utensils, Frequency
Deflector shield on ice making machine has residue accumulations.

3 – 305.14 Food Preparation
Ceiling tiles are damaged and deteriorating in the kitchen and ware washing areas.

Trash from the toilet room is not being removed frequently enough as evidenced by five empty toilet paper cardboard cores and other debris on the floor.

Cooked chicken in the walk-in cooler that was prepared on Friday, September 18, 2020, was stored open with no covering.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils
The meat slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch.

4 – 602.13 Nonfood-Contact Surfaces
Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.

5 – 202.12 Handwashing Sinks, Installation
The drain of the handwash sink is broken and disconnected from the drain line. The drain for this handwash sink has not been functional since January 24, 2020.

5 – 501.17 Toilet Room Receptacle, Covered
Women’s toilet room is not provided with a covered waste receptacle for sanitary napkins.

46.1201 (a) Statutory requirement
Statutory requirement. The Food Employee Certification Act requires that a retail food facility have at least one employee who holds a valid certificate present at the retail food facility or immediately accessible at all hours of operation and who is the person in charge of the retail food facility when physically present and on duty. Previous correct by dates were 4/23/2020 and 6/25/20.

6 – 501.14 Cleaning Ventilation Systems, Nuisance and Discharge Prohibition
The exhaust ventilation system is not cleaned frequently enough as evidenced by an excessive amount of black residue on the system’s exterior components.

3 – 101.11 Safe, Unadulterated & Honestly Presented
Four containers of milk dated 8/30/20 were present in the walk-in cooler. Discarded.

3 – 501.17 Ready-to-Eat, Time/Temperature Control for Safety Food, Date Marking
Chicken, potentially hazardous ready-to-eat food prepared in the food facility and held for more than 48 hours, located in the walk-in cooler, is not being date marked.

6 – 202.15 Outer Openings, Protected
Rear door located in the food prep area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.

Several foam meat trays, each a food contact surface, were observed to have food residue and was not clean to sight and touch. Discarded these trays.

Thermometers for ensuring proper temperatures of food are not available or readily accessible.

Webbing observed on a bag of dry ingredients in the basement and one rodent dropping was observed in the same area.

6 – 301.11 Handwashing Cleanser, Availability
Soap was not available at the handwash sink in the service area.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter
Frequency of cleaning behind equipment in the basement is inadequate as evidenced by a build-up of paper and cardboard debris which creates a harborage area for pests.

4 – 901.11 Equipment & Utensils, Air Drying Required
Food employee observed storing clean food equipment while wet, and not allowing time for draining and/or air-drying (wet nesting).

5 – 203.11 Handwashing Sinks-Numbers and Capacities
The food facility does not have a handwash sink located in the food prep / warewashing area.

Food was held at 44-45 °F, in the walk in cooler, rather than 41°F or below as required.

4 – 301.12 (A-C) Manual Warewashing, Sink Compartment Requirements
The 3 bay sink faucets are not operating properly and the water was turned off at the shut off valves below the sink.

5 – 205.15 System Maintained in Good Repair
Plumbing system not maintained in good repair – observed non functioning faucets at hand sink and 3 bay sink in kitchen.

8 – 201.14 Contents of HACCP Plan
Sushi pH records and testing supplies not available.

2 – 102.11(A-C1)(C4-16) Person in Charge, Demonstration
The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

5 – 202.12 Handwashing Sinks, Installation
Hand sink in kitchen not operating at time of inspection. The water was turned off at the shut-off valves under the sink due to faucet not working properly.

The fan covers on the evaporator in the walk-in cooler, non-food contact surfaces, are not cleaned at a frequency to preclude accumulation of dirt and soil.
