3 – 501.16(A1) Time/Temperature Control for Safety Food, Hot Holding
One item was held at 117 °F, in the hot holding unit in the prep area, rather than 135°F or above as required. All other items in the unit were held above 135°F and the employee stated that the correct process was followed for heating prior to hot-holding. Corrected the one item that was below temp.

3 – 603.11 Consumption of Animal Foods that are Raw, Undercooked, or Not Otherwise Processed to Eliminate Pathogens
Food facility has a reminder statement on the menu for foods that are / or could be served raw or undercooked to the consumer; however, does not clearly disclose which foods the reminder statement applies to.
