Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

Raw eggs (in shell) stored above ready to eat foods and beverages in the reach-in cooler and walk-in cooler. CORRECTED

4 – 501.114 Mechanical or Manual Warewashing Equipment, Chemical Sanitization
The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was approximately 100 ppm, rather than 200 ppm as stated on the manufacturers use directions. CORRECTED

4 – 203.12 Explain Code Submit Accuracy of Temperature Measuring Devices for Ambient Air and Water
Facility should have a thermometer inside each refrigeration unit for measuring the temperature.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter
A small amount of debris and some rodent droppings were observed under a shelf in the rear storage area.

7 – 102.11 Common Name-Working Containers
One working container in rear storage area, used for storing chemicals/ cleaners taken from bulk supplies, was not marked with the common name of the chemical.

3 – 302.11 Packaged and Unpackaged Food-Separation, Packaging & Segregation
Raw chicken was stored above raw pork in the walk-in cooler.

4 – 203.11 Accuracy of Temperature Measuring Devices for Food
Facility needs to obtain a food thermometer capable of measuring the temperature of cold food.

4 – 501.12 Cutting Surfaces Observed one deeply scored cutting boards not resurfaced or discarded as required.

Observed clean food equipment and/or utensils in dish area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

2 – 402.11 Effectiveness-Hair Restraints
Food employees observed in prep area, not wearing proper hair restraints, such as nets or hats that completely cover all hair.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils
Assorted food containers on drying shelf were observed to have greasy residue and were not clean to sight and touch.

3 – 501.16(A1) Time/Temperature Control for Safety Food, Hot Holding
Chili was held at 125°F, in the front area, rather than 135°F or above as required due to the power being disconnected. The product had been heated to 165°F about 3hrs before. This allowed for a rapid reheating to 165°F again and put back to the hot hold unit that had its power restored.

4 – 602.13 Nonfood-Contact Surfaces
Non-food contact surfaces such as shelving not cleaned at a frequency to preclude accumulation of dirt and soil.

5 – 205.15 System Maintained in Good Repair
Drain line under condiment stand has excessive residue posing a risk of a blockage and insect breeding.
