Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

Flooring tiles are missing or damaged. Cove molding tiles are missing, damaged and or repaired with expandable foam adhesive creating non easily cleanable surfaces.

The PERSON IN CHARGE is not ensuring the following: -EMPLOYEES are properly SANITIZING cleaned multiuse EQUIPMENT and UTENSILS before they are reused, through routine monitoring of solution temperature and exposure time for chemical concentration, pH, temperature, and exposure time for chemical SANITIZING.

(Note: this could have been caused by the fact that water was slowly running from the faucet into the container.)

The frame of the reach in refrigerator, a non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Other non-food contact items such shelves and the TV remote control are not clean.

3 – 305.11 Food Storage, Preventing Contamination from the Premises
Observed a drain plunger on a shelf with food equipment. Was also observed on 4/27/22.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter
Frequency of cleaning behind the Bain Marie is inadequate as evidenced by debris on the floor behind it. Cleaned.

6 – 501.15 Cleaning Maintenance Tools, Preventing Contamination
The floor mop is stored in the utility sink in the service area, with potential to contaminate food equipment and utensils; specifically a wiping cloth and stainless steel scrub pads.

3 – 101.11 Safe, Unadulterated & Honestly Presented
A large container of chile verde was observed in the reach-in refrigerator with mold covering the top and is adulterated. Discarded.

Two wisks and a slotted spoon, food contact surfaces, were observed to have food residue and were not clean to sight and touch.

Clean silverware and the bottom of a clean silverware container, food contact surfaces, were observed to have food residue and were not clean to sight and touch. Cleaned.

The interior of dry ingredient bins, a food contact surface, was observed to have food residue and was not clean to sight and touch.

The following non-food contact surfaces are not cleaned at a frequency to preclude accumulation of dust and debris: – ceiling tiles in the baking area observed to have flour accumulation. – floors along the wall in the dry storage area had a dust and dirt accumulation.

Several snack foods on the bottom shelf of the open display case were held at 43°F, rather than 41°F or below as required. After checking the temperatures of products throughout the unit, it was determined that there were multiple cooling vents being blocked by overstock resulting in an insufficient amount of cold air flowing over the items to maintain proper cooling. The affected items were voluntarily removed and the manager will realign the products to improve ventilation.
