Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Observed the following on the Daily Sanitation Operation logs: – pH meter calibration actual values (7.0 and 4.0) are not documented -batches of acidified rice finish/ending times are not documented Cooling step (identified as a CCP in the HACCP plan) time of 4 hours for sushi rolls was not met. Observed employee removing cooling sushi rolls from the walk-in cooler after 30 minutes and placing in store front refrigerated display case.
