Thermometers for ensuring proper temperatures of food are not available or readily accessible. Note: PIC reported that he had purchased a thermometer; however, he was unable to find it during this inspection.

A plastic container of clean food utensils, a food contact surface, was observed to have a black liquid residue and was not clean to sight and touch.

Non-food contact surfaces were not cleaned at a frequency to preclude the accumulation of dirt and soil. Specific items that were not clean were trash cans, shelves, the interior of a refrigerator, the floor in the walk-in cooler, and an old picture that was on a shelf next to the handwashing sink.

The handwashing sink in the prep area was very dirty. Sink was cleaned during the inspection.

Potential insect harborage areas inside the food facility observed in the food prep area. A few roaches were observed on a glue trap. Food debris was observed on the floor perimeters in the prep area and behind a large chest freezer.
6 – 501.114 Maintaining Premises, Unnecessary Items, and Litter
Rubbish and weeds were observed in the vicinity of the rear porch and exterior walk-in cooler. Weeds and rubbish create a harborage area for rodents and other pests.
