Editor’s Note: Last year, Michael and Nicole Borrell began reviewing Lebanon Valley’s restaurants and eating attractions as the Lebanon Valley Food Critics. Since then, the couple has aimed to offer unbiased reviews of the eating and drinking establishments the Lebanon Valley has to offer. LebTown is pleased to be partnering with LVFC to share these reviews with our readers. Bon appétit!
Welcome to the third season of our highly anticipated Lebanon Valley “Wing Wars.” Four entrants from across the Valley will compete, bracket style, to be declared the winner of Best Wing in The Valley.
(In case you missed it, the winner of Season One was the Red-Headed League, which has since closed, and the winner of Season Two was the Gin Mill.)
Our judgement will be based upon several factors including: wing sauce/rub flavor, size of wing, how they’re cooked, presentation, and critic impression.
Located along Rt. 422 in the Palmyra area, Sinkhole Saloon & Grille is our first stop.

This restaurant and bar has been around for around 15 years. They have bar seating along with a couple dining areas, and can be accessed from the outside as well as from within the Palmyra Bowling Center.
Today, we ordered four wing flavors, habanero BBQ, sink-fil-a, sriracha ranch garlic parm, and Middlesworth BBQ rub. Our order was 10 wings each ($15) and for $0.50 you can split/mix wing sauces.
The wings come out as a good size wing. The crispy texture is immediately noticable, with fresh, moist meat.
As for the sauces, they make most of their wing sauces in house. They have 25+ sauces and seven rubs to choose from.
The habanero brings the heat. The sink-fil-a is their take on Chick-fil-A sauce. The Sinkhole’s version is more mustard flavor and doesn’t have quite as much tang. The best sauce we had was the Sriracha ranch garlic parm, which had good representation of all the flavors in the sauce when we tasted it.
Our final impression:
- Nice crispy wing.
- Plenty of flavor options.
- Quality sauces that are mostly made in-house.
- Wednesday wing special, $11 for 10.
We will now head over to our other entrants: The Franklin House, Cocktails Kitchen + Bar, and Keener Poultry. After which we will announce the winner.
