Deli ham and tuna salad were held at 44°F and 45°F in the bain marie sandwich prep refrigeration unit rather than 41°F or below as required. Note: This was due to the positioning of these items in the unit; they were stored above the closed pans that were properly positioned in the unit. Other food in this equipment was held at the proper temperature. The ham and tuna were discarded.

PIC had difficulty finding test strips; when found, the package had not been opened; therefore, test strips are apparently not being utilized.

One roll of toilet tissue was not on the dispenser. Removed.
