Corn dip and cooked noodles, a refrigerated, ready-to-eat time temperature control for safety food in the reach-in fridge in the kitchen area, was date-marked by the facility, but was beyond the seven-day use or sell-by date and requires discarding. Corn dip 12/4 and cooked noodles 12/11. Discarded.

The quaternary ammonia concentration in the sanitizing solution of the three-bay warewash sink was 0 ppm rather than 200 ppm, as stated in the manufacturer’s use directions. Facility will use high temp dishwasher and tablets until three-compartment sink auto sanitizer is repaired.
