Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

Paper towel and soap dispensers are missing at the handwash sink in the food prep area.

Several items of potentially hazardous ready-to-eat food prepared in the food facility and held for more than 48 hours, located in the refrigeration units, are not being date marked.

Non-food contact surfaces, specifically inside of the rach-in refrigerator and the interior of the prep sink, not cleaned at a frequency to preclude accumulation of dirt and soil.

Bilco door to the basement, located in the rear of the food facility has a gap and a square opening and does not protect against the entry of insects, rodents, and other animals.

Observed an employee emptying a long-handled dust pan into a trash can that is directly next to the cutting board of the bain marie in a manner that could potentially contaminate the prep surface with dust from the floor.

Tortilla soup, a potentially hazardous ready to eat food requiring datemarking, in the reach-in refrigerator, was beyond the date-marking and requires discarding.

Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.

The ice scoop, a food contact surface, was observed stored on a surface that was dusty and rested.

6 – 501.111 Controlling Pests
Food facility is not removing dead or trapped pests from control devices frequently, as evidenced by observed dead mouse in a pest control device in the bar area and the facility could not show when the trap was checked.

Observed excessive number of flying insects near a recycle dirty recycle bin by the bar and at an open sump in the basement. Recycle bin was removed to be cleaned.

Food Employee observed donning single use gloves without a prior hand wash.

3 – 403.11 Reheating for Hot Holding
Cheese sauce was not heated to the required temperature before being placed in the steam table for hot holding as required.

3 – 501.16(A1) Time/Temperature Control for Safety Food, Hot Holding
Cheese sauce was held at 114 °F, in the hot holding unit, rather than 135°F or above as required.

3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding
Beef was held at 49°F, in an under-counter refrigerator that was known not to be working properly, rather than 41°F or below as required. Beef discarded.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter
Facility is not cleaning behind or under equipment at a frequency needed to maintain the prep area.

One spray bottle in warewashing area, used for storing cleaner taken from bulk supplies, was not marked with the common name of the chemical. Proper label was applied during the inspection.

Food Employee observed changing tasks that may have contaminated hands without removing gloves and washing hands.

Observed several food employees wearing visors as a hair restraint that is not designed to effectively keep their hair from contacting exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES.

Observed a black, mold-like substance on the ice chute and was not clean to sight and touch.
