Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

1 gallon container of milk is offered for sale past the expiration date.

5 – 102.13 Water Sampling
Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability.

A fan and cardboard on the lower level of a prep table, both non-food contact surfaces, not cleaned at a frequency to preclude accumulation of dirt and soil.

Observed clean food equipment in the rear prep area, stored uncovered or not inverted.

5 – 501.11 Outdoor Storage Surface
One outside recycling receptacle does not have a tight-fitting lid or cover and there is a small amount of litter and debris scattered around the ground in the rear.

Observed clean food equipment stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

4 – 101.11 Characteristics – Materials for Construction and Repair
Food contact surface of two bus tubs was not smooth, easily cleanable and/or resistant to pitting, cracking or scratching. Both were discarded and new bus tubs had already been purchased.

Guacamole was held at 42-46°F, in the prep area, rather than 41°F or below as required.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils
Multiple food containers on the drying shelf and on the shelf for use in the prep area, were observed to have food residue and were not clean to sight and touch. REPEAT 5/1/20, 3/8/21.

2 – 102.11(A-C1)(C4-16) Person in Charge, Demonstration
The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. REPEAT 3/15/21, 3/18/21.

Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between; specifically two employees in the deli area were observed cleaning and using floor cleaning tools and then switching to a food task without changing gloves and washing hands.

4 – 101.11 Characteristics – Materials for Construction and Repair
A shelving unit near the meat grinder in the walk-in cooler has a wooden brace which helps support the unit. This wooden brace is splattered with meat residue and cannot be properly cleaned. Steps should be taken to eliminate this hazard.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter
Observed spilled dry beans and rice in the basement storage areas. Spilled food creates conditions for rodent activity.

3 – 302.12 Food Storage Containers Identified with Common Name of Food
Several food ingredient storage containers, in the hot food prep area, are not labeled with the common name of the food.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils
Several foam meat trays, each a food contact surface, were observed to have food residue and were not clean to sight and touch. Discarded these trays.

Observed a bus tub in use for food preparation that had a large crack on the corner and was tied together with electrical wire ties.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter
Frequency of cleaning behind certain pieces of equipment is inadequate as evidenced by debris behind a large freezer. Inadequate cleaning creates conditions for rodent activity.

4 – 602.13 Nonfood-Contact Surfaces
Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil; specifically walls and outside of containers such as the large spice/seasoning containers.
