Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

Food employees observed not wearing proper hair restraints, such as nets, hats, in a manner that controls all hair.

Food container on drying shelf was observed to have food residue and was not clean to sight and touch.

Observed old food residue on the following food contact surfaces, which were not clean to sight and touch: – blade of the table-mounted can opener – backside edge of the deli slicer blade **CORRECTED**

7 – 202.12 Conditions of Use
Observed 2 cans of spray insecticide in the kitchen area, not labeled by the manufacturer as approved for use in a food facility. **CORRECTED**

4 – 102.11 Characteristics-Single-Service & Single-Use Articles
Observed the facility utilizing regular trash can liners to cover the mixing bowl of the stand mixer instead of food-grade liners.

3 – 304.12 In-Use Utensils, Between Use Storage
Food dispensing utensil in the sugar bin was observed stored in the food and not with a handle above the top of the food. Facility was utilizing a ceramic coffee mug as a scoop, which may chip/crack and create a food safety hazard.

4 – 602.13 Nonfood-Contact Surfaces
Observed a biofilm-like residue and a patch of rust on the deflector plate within the ice machine.

Assorted food containers on drying shelf observed to have food residue and were not clean to sight and touch.

3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding
Assorted food in baine marie was held at 43-45°F, in the Prep area, rather than 41°F or below as required.

4 – 903.11 (A-B)(D) Equipment, Utensils and Linens, Storing
Observed clean food equipment and/or utensils in dish area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

Assorted food was held at 43-46°F, in the upper left sushi case area, rather than 41°F or below as required.

Litter and debris under and around equipment.

3 – 501.15 Cooling Methods & Food Containers Used/Arranged
Observed blended spicy tuna placed in the refrigerator in containers greater than 4 inches deep, which is not a proper cooling method.
