A variety of time/temperature control for safety foods, located in the top portion of the refrigerated preparation table nearest the stove, were held at approximately 50°F, rather than 41°F or below as required. The Owner of the facility states that the items within the refrigerated preparation table were held within the walk-in cooler until the facility was prepared for opening at 11:00 A.M. Temperatures within the walk-in cooler and the lower portion of the refrigerated preparation table were checked during the inspection and were adequate. The top portion of the refrigerated preparation table is kept open during busy times and was open at the time of this inspection. As it appears as though the top portion of the refrigerated preparation unit may not be able to hold temperature when it is left open, and in order to avoid time/temperature control for safety foods from being exposed to unsafe temperatures for prolonged periods of time, the Owner voluntarily moved the items into the lower portion of the equipment and will manage the process moving forward through frequent rotation/keeping the equipment closed whenever possible/adjustments to the equipment. **CORRECTED**

Observed pizza peel being stored directly on top of the pizza oven between uses, which is not a food contact surface. **CORRECTED** Observed a biofilm-like residue on the deflector plate of the ice machine.
