A little over two years since closing its South Lebanon Township location of 29 years, Pucillo’s Pizza & Pasta is preparing to open a new eatery in Myerstown on Monday, April 7.

Siobhan Pucillo, owner of Pucillo’s Pizza & Pasta, spoke with LebTown about what led to her decision to open the new location at 52 W. Main Ave., Myerstown, in the building of the former T&M’s Pizzeria, better known as Tony’s Roma Pizza.

Pucillo explained that Tony’s Roma Pizza changed its name to T&M’s Pizzeria, which stood for Tony and Maria, after being sued by a Tony’s Roma steakhouse. Starting Monday, April 7, the building will be run by Pucillo’s Pizza & Pasta.

“We were going to move to South Carolina when we sold” and closed the South Lebanon Township restaurant on Nov. 1, 2022, Pucillo said. “That was our intention. But we decided to stay here after my dad got sick. When he passed away, what we were going to do there fell through, so we just stayed.”

After Pucillo and her family realized they were going to stay local, they opened a food truck called Pucillo’s Italian Oven on Wheels in March 2023 “and that has just been booming,” she said. Many customers from various locations asked them the same question: Do you have a brick-and-mortar pizza shop?

In hindsight, Pucillo said they were burnt out and should have just closed the South Lebanon Township location for about a month to relax a bit and regroup after dealing with the COVID-19 pandemic and taking care of her father.

“We really do still miss our shop. We miss the people,” Pucillo said. “We just missed everything about it.”

So, when the opportunity arose to lease the restaurant portion of the building from their “very good friends” at T&M’s Pizzeria, Pucillo took it.

Pucillo and her family are making some repairs, putting up drywall, painting, and cleaning the building to prepare for their grand opening on Monday, April 7.

Pucillo and her family are striving to create “a little Italian bistro” atmosphere at the new location in Myerstown. She said customers “can expect the same good food and service that they always had for the last 30 years at the Pucillo’s on 897.”

“Pucillo’s was very successful because of our hospitality. Everybody loved my husband in there,” Pucillo added. “Tom [Hetrick], he was the greeter. Everyone that came in looked forward to seeing him because he greeted everybody like family. So, we hope to have the same customer service that we’ve always had.”

Customers can park in the parking lot behind the building at 52 W. Main Ave. and walk to the front door, which has one step to get inside the building. At the time of the interview, Pucillo’s Pizza & Pasta’s business hours were still being determined.

“We’re going to be opened pretty much every day right now,” Pucillo said. “But we do have some commitments [with the food truck], so we might have to close early one night or open later one day just until we get those commitments going.”

Pucillo also said they were finalizing Pucillo’s Pizza & Pasta’s menu but said it will feature Neapolitan and Sicilian pizzas, which mainly vary in the thickness and texture of the crust.

“All of our specialty pizzas will be returning too,” Pucillo said. “They’ll know and look in the menu, but the main one that people really went after was the Big Tom. It was like a Big Mac, but we had to call it Big Tom because of copyright.”

The menu will also feature Pucillo’s personal favorite item, Gnocchi Ala Gina, as well as other pasta specials, calzones, strombolis, subs with their homemade bread, ham rolls, pepperoni rolls, Philadelphia rolls, wings, fries, and other sides.

Pucillo’s Pizza & Pasta’s menu pricing will be lower than Pucillo’s Italian Oven on Wheels. Pucillo said she is certain food prices have risen in the little over two years since they’ve been in business as a brick-and-mortar pizza shop, but they are going to try to keep the costs reasonable.

In addition to some menu items, the new location in Myerstown will share some staff members with the food truck.

“My daughter has moved on, but she will help us whenever needed. She will probably be there on the weekends,” Pucillo added.

She said she is considering hiring two pizza makers, two sandwich makers, dishwashers, and a number of delivery people, with the employees being a mix of full- and part-time.

The pizza shop will deliver to Myerstown, Richland, Lebanon city, and other surrounding areas.
