Cabinet under fountain area in the inside kitchen area is wet and plumbing is dirty along with drain with white/pink slime.

Gasket of two-door reach-in cooler on cook-line is torn/damaged and needs to be replaced. Bain marie lid of salad station is damaged and not in good repair and needs to be repaired with approved materials or replaced.
4 – 601.11(A) Equipment, Food Contact Surfaces, Non-Food Contact Surfaces, and Utensils
Interior top of microwaves in the inside kitchen with food splatter on top, four tongs stored as cleaned with dried-on food residue hanging from rack by salad prep, a food contact surface, was observed to have food residue and was not clean to sight and touch. Corrected chemical dishwasher at the front bar area out of chemical reading 0ppm rather than 50-100ppm. Corrected.
6 – 501.111 Controlling Pests
Food facility inspection indicates evidence of fly activity in inside kitchen areas, but facility does have a pest control program.
8 – 201.13 When a HACCP Plan is Required
Food facility did not submit a HACCP plan for approval by the Department as required. Food facility is making and bottling hot sauce (stored out of refrigeration) with no lab testing or approval from the department.
