A couple Fridays back, we had a chance to attend a food truck fundraiser for the Keystone Fire Co. in Myerstown. These events are great for us, we get to sample quite a few different trucks at one time. This helps us out during a busy life. And as the weather begins to turn, you will see more of these events popping up, or you will see food trucks out and about more often.
Our second stop of the night was at a truck you usually don’t think of with food trucks in this area. Rad-ish Food Truck offers a couple nontraditional options as well as some tasty and savory options. This truck is based out of Ephrata in Lancaster County.

For this critic’s meal, I chose a healthy option, the Grain bowl ($11). This dish came with baby green, citrus artichoke rice, tomatoes, carrots, marinated white beans, pickled red onions, avocado, toasted seeds, and a white vinaigrette on the side.
The natural flavors stood out while eating this dish. The ingredients were all separately stacked. It’s good to blend the veggies into different combinations. It doesn’t need more than a slight drizzle of the balsamic to enhance flavor.
Our take: It was a nice to have a healthy option amongst all the fried food offerings this night. The freshness of the ingredients stood out. It was our surprise standout truck for the night. Next time you see them out at an event, stop on by. The food is pretty “Rad.”
